La tyrosinase est une oxydase à cuivre présentant une activité pour les catéchols et crésols. Elle est responsable du suivi des réactions de brunissement. Cette enzyme possède deux sites de liaison pour les substrats aromatiques et un site de liaison distinct pour l′oxygène-cuivre. Le cuivre est probablement sous forme de Cu(I) et l′inactivation implique une oxydation pour former des ions Cu(II).

The weight of this product can be determined using the activity value reported on the lot specific Certificate of Analysis(COA). For example, the sample COA has a activity value of 6540 units/mg. The certificate of analysis for the lot will report the exact tyrosinase activity for a particular batch. The lot number can be found on the label of the bottle, or you can call technical service (800-325-5832) for a sample lot number to view the online certificate of analysis.

The product is shipped at ambient temperature and is stable for up to two weeks during shipment. Once received, it is recommended to store the product at -20°C to insure the quality for long term storage.
