Application
It is intended to harmonize the assessment of allergenic hazelnut proteins content in food products, based on the following understanding:
(1) the composition of hazelnuts may vary depending on their source or the different pretreatments they have undergone (e.g. defatting, roasting)
(2) when the substance undergoes any form of preparation or processing (for example, boiling, frying, or baking), its composition and properties might alter.
