• in the preparation of reagent for determining the degree of hydrolysis of milk proteins
• in the measurement of free amino acids of milk samples by O-phthaldialdehyde/N-acetyl-L-cysteine (OPA/NAC) assay
• in the derivatization of putrescine samples
