General description
Casein ist ein Milchprotein. Es ist kostengünstig, nicht toxisch und sehr stabil. Dieses Phosphoprotein macht rund 80 % des Gesamtproteingehalts von Kuhmilch aus. Casein gehört zu einer der größeren Gruppen sekretorischer, Calcium-bindender Phosphoproteine.
Application
N,N-dimethyliertes Casein aus Kuhmilch kann in Tests verwendet werden, die die funktionale Rolle von Gewebetransglutaminase (tTG) bei Erkrankungen nachweisen und bestimmen helfen. Insbesondere findet N,N-dimetyhliertes Casein Anwendung in der mechanischen und kinetischen Analyse von tTG auf Proteinsubstraten, die unter Umständen mit neurodegenerativen Erkrankungen in Zusammenhang stehen.
Verglichen mit nicht-methyliertem Casein weist dieses Produkt weniger als 10 % der Reaktivität gegenüber 2,4,6-Trinitrobenzensulfonsäure (TNBS) auf.
Proteasesubstrat, das für Tests auf Basilase verwendet wird,[1] und ein Subtilisin-Analog, das mittels ortsgerichteter Mutagenese erzeugt wurde.[2]

Biochem/physiol Actions
Casein wird in Arzneimitteln gerne als Trägerstoff genutzt. Es verfügt über antioxidative Aktivität.
