General description

A β-galactosidase preparation produced by submerged fermentation of a selected strain of the yeast Kluyveromyces lactis.

Application

β-galactosidases from different species, including Kluyveromyces lactis and Kluyveromyces fragilis[1], hydrolyze lactose.

Biochem/physiol Actions

β-galactosidase cleaves lactose into its monosaccharide components, glucose and galactose. It also catalyzes the transglycosylation of glucose into allolactose, the inducer of β-galactosidase, in a feedback loop[2].

    1. The supplier, Novozymes, does not determine the protein concentration (in mg Protein/ml) of this enzyme in the final product. The activity is given in units per weight of the solution, and the density of the solution usually runs around 1.2 g/mL.
