General description

Glycyrrhizin is a plant glycoside derived from the liquorice (Glycyrrhiza glabra) plant root. It is a sweet-tasting molecule sweeter than sucrose (about 30-50 times), but it does not influence the glycemic index since it is not metabolized. It is often used as a natural emulsifier and gel-forming agent in foodstuffs,, beverages, and cosmetics.
