Actions biochimiques/physiologiques

Le maltose est un disaccharide contenant deux molécules de glucose liées par une liaison α(1→4) glycosidique. Le maltose peut être dérivée à partir d′amidon alimentaire par l′action de l′amylase. Le maltose se retrouve dans de nombreux produits alimentaires, y compris les bières, les céréales et les pâtes.
