Descrizione generale

Oleuropein is a phenolic compound with pungent odor, which is found in extra virgin olive oil. It can undergo hydrolysis by Lactobacillus plantarum via action of β-glucosidase and esterase to form elenolic acid and hydroxytyrosol as the final products.
