Biochem/physiol Actions

β-Carotin ist das wichtigste der Provitamine A und kann aufgrund seiner in vitro hemmenden Wirkung auf die von Radikalen initiierte Peroxidierung als Antioxidans klassifiziert werden. In vivo scheint es jedoch je nach zellulärer Umgebung entweder als Anti- oder als Prooxidans zu agieren. Es reduziert die Inzidenz vieler Krebsarten, erhöht aber die Inzidenz von Lungenkrebs bei Rauchern.
