General description

Bixin is a carotenoid and the principal colouring component of Annatto food colouring (E160b), which has a long history of use in the food industry for the colouring of a wide range of food commodities.

Bixin is a methyl ester of a dibasic fatty acid. On treating with alkali, it is hydrolyzed to form water soluble norbixin.[1] It is obtained in pure form from annatto seeds. Bixin is a carotenoid and estimated as yolk and skin pigmenter.[2]
