General description

Isopropyl alcohol (IPA, 2-propanol, isopropanol) is a water soluble aliphatic alcohol with a sweet odor. It is one of the volatile flavor compound found in Tricholoma matsutake,a fungi used in Japanese dishes for its aromatic flavor. IPA is also a major flavor component in lemon essence.
