General description

L-malic acid, also known as L-malate, is a dicarboxylic acid present in all living organisms, and it plays a pivotal role in the Calvin and Krebs (Citric Acid Cycle) Cycle. Its quantification holds particular significance in various industries, including winemaking, brewing, baking, and the production of fruit and vegetable goods, cosmetics, and pharmaceuticals. It is recognized as one of the most prevalent fruit acids and typically constitutes the highest acid concentration in wine. L-malic acid, owing to its greater acidity compared to citric acid, is widely employed in the food industry as an acidity regulator, preservative, or flavor enhancer.In winemaking, the microbial conversion of L-malic acid to L-lactic acid is a monitored process, particularly during malolactic fermentation. This transformation leads to an overall reduction in wine acidity, contributing to an enhanced wine flavor. Principle

The Malic Acid Quick Test Strips are based on L-malate dehydrogenase catalyzed oxidation of L-malic acid in which the formed NADH reduces a chromogenic reagent.The intensity of the product color is directly proportional to the L-malic acid concentration in the sample.
